2 c sugar
3 c sifted all purpose flour
2 tsp baking powder
1/2 tsp salt
6 egg whites
1/2 tsp coconut flavoring
1 tsp vanilla
1 c fresh grated coconut
1 c coconut milk
1 c shortening
Scrub coconut to remove hair, puncture coconut in two of the eyes. Place over large glass and let all milk drain out of it (be sure and save coconut milk). Break coconut and grate all of it. Mix sugar and shortening until smooth, gradually adding flour, baking powder, salt and coconut milk. After mixed well, add flavoring and beaten egg whites and stir. Add 1 cup coconut (saving the remaining coconut for the icing). Bake at 325 degrees for 45 minutes.
