This is a great quick snack to make late at night or for use with dips.
Ingredients:
2 large potatoes
3 tbsp olive oil
½ tsp paprika pepper
Salt
Using a sharp knife slice the potatoes very thinly so that they are almost transparent. Drain the potatoes thoroughly and pat dry with paper towels.
Heat the oil in a large frying pan and add the paprika, stirring constantly, to ensure that the paprika doesn’t catch alight and burn.
Add the slices and cook I a single layer for about 5 minutes or until the potato slices begin to curl at the edges.
Remove the slices from the pan using a perforated spoon and transfer them to paper towels to drain thoroughly.
Thread the potato slices on to several kebabs skewers.
Sprinkle the slices with a little salt and cook over a medium grill for 10 minutes, turning frequently, until the potato slices begin to crispen. Serve hot.
